Raw Vegan Chocolate Ice Cream

Summer has been on my mind lately. 
The weather is getting warmer everyday, and the sun is out for longer periods of time. 
I can't wait to get to the beach! 
Instead of having full-fat, artery-clogging, dairy ice cream, this year, I'll have my very own... RAW VEGAN CHOCOLATE ICE CREAM. And no, it's not another version of "banana nice cream" or "banana whip" or whatever you call it. Don't get me wrong, I love raw banana ice cream. But I also like to have variety. I don't want my ice cream to taste like bananas all the time! This raw ice cream has no bananas or banana flavor. So, for all of the banana haters out there, this recipe is for you. This recipe is DIVINE! Now that I've made it, I don't know how I will survive without it. 
This ice cream is rich, creamy, and everything you could ever dream of on a hot summers day.
Once you taste this delicious treat, you'll forget about regular dairy ice cream.
Not only is this ice cream delicious and animal-friendly, but it's filled with health benefits!
Eating a scoop of this lip-smacking ice cream will give your body protein, fiber, healthy fats, anti-oxidants, and polyphenols. BAM!
Ingredients (makes about 12 scoops):

  • 3 cups soaked raw cashews (soak them overnight)
  • organic coconut meat (from 2 young coconuts, about 1/2 cup) 
  • coconut water (from one young coconut)
  • 1 cup maple syrup or coconut nectar 
  • 1/3 cup organic raw cacao nibs 
  • 1/3 cup - 1/2 cup organic cocoa powder (depending on how dark you want the chocolate ice cream to taste) 
Directions:
Combine all of your ingredients in a high speed blender and freeze for 2-3 days before serving. (It scoops just like regular ice cream!) Enjoy!
