Roasted Cauliflower

For today's post, I'm sharing my roasted cauliflower recipe as well as blog feature with Krisi Miller. Krisi is also a vegan. Now, let's talk Cauliflower.
The other day, I was at my local whole foods and I happened to find organic purple and orange cauliflower. As soon as I saw them, I screamed "CAULIFLOWER!". Everyone in the produce isle turned around to stare at me. I knew exactly what they were thinking: what kind of teenage girl gets excited about a vegetable?
That teenage girl is me. I swear there is a little happy meter inside my heart, and every time I step into whole foods I break the meter because I just can't contain myself. Even if I was having a bad day, you could bring me to whole foods and BAM, I'd automatically have a smile on my face. 
Cauliflower is an amazing vegetable. It has so many heart strengthening and disease fighting properties. If you don't already eat cauliflower on a regular basis, you need to make sure that this vegetable gets incorporated into your diet ASAP.
If you don't like cauliflower for some reason, PLEASE try this recipe. The spices make this cauliflower so flavorful, you'll forget that you are eating a vegetable.
 Ingredients:
  • 1 head organic orange cauliflower
  • 1 head organic purple cauliflower
  • 2 tsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder 
  • 1 tbsp chili powder 
  • 2 tsp salt 
Directions:
Preheat your oven to 400 degrees. Cut the 2 heads of cauliflower into bite-size florets. Toss them with the olive oil and seasonings until they are well coated. Bake for 10-15 minutes until the edges begin to turn golden brown. Enjoy!
