Raw Oreos

Raw Vegan Oreos. 
To be completely honest, I've never liked real oreos. The cookie always tasted fake, and the creme was too sweet. Even as a sugar crazed kid, whenever I was offered oreos at a birthday party or play date, I always turned them down. Something about them just made me feel "blah". However, if you offered me these oreos, I would devour them 3 at a time. The chocolate cookie is soft and fudgy, while the creme filling has a sweet coconut flavor with a kiss of mint.



 Ingredients (makes about 35 large cookies) :

The Cookie:

  • 1 cup almond flour 
  • 1 cup raw walnuts
  • 20 medjool dates 
  • 1/2 cup cocoa powder 
  • 2 tbsp chia seeds
  • 3 tbsp hulled hemp seeds
  • 2 tbsp cacao nibs 
  • 2 tbsp flax seeds 
The Filling:
  • 1/2 cup coconut butter 
  • 3 tbsp agave nectar or another sweetener of your choice 
  • 1 tsp vanilla extract or mint extract 
Directions:
In a food processor combine the cookie ingredients and pulse until a nice dough forms. Roll the dough out on a sheet of parchment paper until it is 1/4 inch thick. Cut out little circles from the dough using a cookie cutter or bottle cap. In a high speed blender combine the coconut butter, agave nectar, and vanilla. Once everything is combined, spread 2 tsp of the filling on each cookie. Store them in the freezer if they are not going to be eaten the same day. Enjoy!
