Raw Fettuccine Alfredo

Pasta. Pizza. Garlic Bread.
I don't miss it.
I used to eat Italian food once a week. It was mostly take-out pizza and pasta filled with refined carbs and cholesterol. After eating clean for a while, I decided to have some pizza as a treat. Little did I know that a single slice of pizza would lead me to having a stomach ache for 2 days.
Pasta too - the moral of the story is - try not to eat too much processed stuff.

Having said all of that, I have to admit that love carbs. I am the carb queen. However, the carbs that I eat are not processed at all. The carbs in my diet mostly come from fruit.
But what do I do when I feel like having some noodles?
SPIRALIZE!
I use my spiralizer to make some "zoodles" (zucchini noodles) and add some sauce.
This Raw Fettuccine Alfredo is about to blow your mind. It is so creamy and light - yet it fills your Italian food cravings.
 Ingredients (makes 4 servings):

  • 1/2 cup raw pine nuts or 3/4 cup raw cashews
  • 1/4 cup nutritional yeast 
  • 4 cloves of garlic  
  • 1/4-1/3 cup of water 
  • 4 medium zucchini's
  • salt and pepper to taste 
Directions:
Spiralize 4 medium zuchinni's and set aside. In a high-speed blender, combine the pine nuts, nutritional yeast, garlic, and water. Blend for a few seconds, and add water until you like the consistency. Mix into the noodles and add salt and pepper. Enjoy!
