Most people hate the snow because they get stuck in their house.
I'm different from most people.
I love being snowed in.
Whenever I get trapped inside my house, I know that I'll always have my oven and Netflix waiting for me. To me, snow days mean chocolate chip cookies and an 80s movie marathon. It usually starts with The Karate Kid and ends with Pretty in Pink. Of course, you can't forget The Breakfast Club or Sixteen Candles. I'm happy with anything that features teenage Molly Ringwald or Ralph Macchio's baby face.
However, you can't watch any of those movies without a hot batch of chocolate chip cookies.So the next time you are about to burst into tears at the end of The Outsiders, you can stuff your face in these cookies without feeling guilty. Did I mention that they are also gluten free?
Ingredients:
- 2 cups of almond flour
- 1 cup of oats
- 1/4 cup ground flax seeds
- 1 cup of enjoy-life chocolate chips (I like do use half carob chips and half chocolate chips)
- 1/2 cup coconut oil (at room temperature)
- 1/4 cup organic turbinado sugar
- 1/3 cup maple syrup
Directions:
Preheat your oven to 350. Using your hands, mush all of the ingredients together and flatten the cookies into small pancakes. Press them down on a lined baking sheet and bake for 8-10 minutes until the sides are golden brown. Transfer them to a cooling rack and EAT!
