Going vegan wasn't hard for me because I was never a big meat person.
If you are one of those people, this vegan coconut bacon might be the solution to your problems.
It's fatty, crunchy, flavorful, and cholesterol free.
What else can you do with this coconut bacon?
MAKE A VEGAN BLT!
I used low-sodium ezekiel bread and mashed avocado as a substitute for mayonnaise.
This is definitely my new favorite sandwich.
Ingredients for vegan coconut bacon:
- 3 1/2 cups of unsweetened coconut flakes
- 1/4 cup organic tamari
- 1 tbsp apple cider vinegar
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
Preheat your oven to 400 degrees, or turn on your dehydrator. In a large bowl, mix everything together and make sure every piece of coconut is coated in the tamari and other seasonings. Spread the bacon out on a large baking sheet. Bake for 10-15 minutes until the coconut bacon is golden brown and crispy. Take the bacon out of the oven and stir every 5 minutes. If you are using a dehydrator, put the bacon in overnight. Enjoy!
