Raw Vegan Caramel Dip

The Super Bowl is coming up. You need to bring something to a party that's quick and easy to make. Why don't you make this raw caramel? It takes 5 minutes to make. The kids and adults will love it. All you need is some apple slices for dipping. 
To be honest, I never liked traditional caramel. I always thought of it as the annoying candy that gave  me a sore jaw. It was too sticky and always got stuck in my teeth. When I started eating clean, I couldn't have regular candy anymore. Dried fruits became my candy. Dried berries, figs, and DATES. 
Dates are magical. They are easily digested, high in vitamin A and vitamin K, loaded with minerals such as copper, magnesium, manganese, and niacin which protect against cell damage. They are also great alternatives to processed sweeteners. 
Ingredients (makes 10 servings):

  • 20 medjool dates 
  • 1/4 cup water 
Directions:
In a high speed blender, combine the ingredients and pulse until it becomes a smooth paste. Enjoy!
