Chocolate Avocado Banana Muffins

These little gems are full of health benefits with no added oils. The avocado and banana keeps them moist while the flax seeds hold everything together. To make them even better, I topped these babies off with a coconut cream drizzle and a few hemp seeds.



Ingredients (makes 48 mini muffins):
  • 2 medium sized avocados
  • 4 ripe bananas 
  • 2 cups whole wheat flour 
  • 2 tbsp ground flax seeds 
  • 2 tsp aluminum free baking powder
  • 1 tbsp cinnamon
  • 1 cup organic maple syrup
  • 3/4 cup vegan organic chocolate chips 
Coconut Drizzle:
  • 1/2 cup Coconut Cream 
  • 1/4 cup organic powdered sugar 
Directions:
Preheat your oven to 350 degrees. Line or grease 2 mini muffin pans. In a large bowl, mash the avocados and bananas together, and then add the ground flax seeds and maple syrup. In another bowl, sift the whole wheat flour and mix it together with the baking powder and cinnamon. Slowly pour the dry ingredients into the wet ingredients and stir slowly to combine. Fold in the chocolate chips spoon into mini muffin pan! Bake for 10-15 min or until the edges are golden brown and a toothpick inserted comes out clean. Enjoy!

    1. To be honest, I haven't tried it! But - If you were going to try it with GF flour, I would add some xanthan gum. If you try it, please let me know!
