The fall is beautiful. The weather is cool and crisp, the leaves give off radiant colors.
My favorite part about this season is pumpkins!
I love pumpkin.
Pumpkin pie, pumpkin bread, pumpkin cookies... I think you get it.
Ingredients:
- 1 1/2 cups whole wheat flour
- 1 can pureed organic pumpkin
- 1 1/2 cup maple syrup or agave nectar
- 1 tbsp ground flax seeds
- 1 tbsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup vegan chocolate chips
Directions:
Preheat your oven to 325 degrees. In a large bowl, mix together the pumpkin, maple syrup, ground flax seeds, and spices. Slowly add the flour and leavening while stirring. Once all of the ingredients are combined, pour the batter into your muffin tin and sprinkle a few chocolate chips over the top of each muffin. Bake for 15-20 minutes or until a toothpick comes out clean. Enjoy!
