This salad is basically everything I love about summer thrown into a bowl.
It's great to eat on a hot day when you don't feel like cooking.
Zucchini is my favorite squash because of its amazing texture. It's crunchy on the outside and a little bit spongy on the inside to soak up all of the flavor of whatever you dress it with.
Arugula is bitter, but it's a good kind of bitter. Arugula adds a nice tangy flavor to any salad.
Watermelon is an amazing fruit. It's sweet, juicy, and crunchy.What about nutritional benefits?
Zucchini: Vitamin C, Lutein (promotes healthy eye-sight), Manganese (protects your tissues!)
Arugula: Vitamin K, Iron, and Copper
Watermelon: Vitamin C, lycopene (anti-inflammatory and antioxidants; the darker the red watermelon flesh, the better it is for you!)
- 3 organic zucchinis
- 2 cups arugula
- 1 cup chopped watermelon
- 1/2 cup hummus
- 1/4 cup balsamic vinegar
- 2 tbsp apple cider vinegar
- 1/4 cup water
- juice from 1/2 a lime
Spiralize the 3 zucchinis and chop the watermelon into whatever shape you desire. Add the arugula, and toss everything together. In a small bowl, whisk together the hummus, vinegars, water, and lime juice. Pour as much or as little as you want onto the salad. Enjoy!
