Raw Mint Chocolate Kale Klondike Bar

My younger brother was really excited about these "klondike bars", until he saw me put kale into the vitamix. 
"Really? Kale?" he asked while rolling his eyes. "Kale's good for you." I told him. 
"Ugh" he sighed, and walked away.
I think my entire family is tired of me ranting about the health benefits of kale. 
Am I annoying? Yes. 
Am I sorry for nagging them to eat more vegetables? No. 
Kale is one of the best vegetables you can eat. 
It's filled with powerful antioxidants, vitamins, and phytonutrients.
Don't be worried about kale overpowering the sweetness of this dessert, you can't taste it at all. 

Ingredients (makes 6 bars):

"Ice-cream":

  • 5 medium-sized bananas (frozen)
  • 1 cup chopped kale 
  • 4-5 chopped mint leaves 
Chocolate Shell:
  • 1/3 cup melted coconut oil 
  • 1/2 cup raw coconut nectar (maple syrup or brown rice syrup will work too) 
  • 1/4 cup organic cocoa powder 
Directions:
In a high-speed blender, combine the all of the "ice cream" ingredients. Once the mixture is smooth, pour into a deep-dish pan and freeze for at least 5 hours or overnight. Once completely frozen, prepare the chocolate shell by melting the coconut oil. Add the coconut nectar and cocoa powder, and stir until everything is well combined. Cut the bars into whatever shape you desire, and dip into the chocolate mixture. Once all of the bars are completely coated, put them back into the freezer for 1 hour. Enjoy!
